So....I LOVE to cook. LOVE it!!! I only wish I had more time or energy to do it more! With graduate school and internships however, I don't do it as much as I would like. But I have found a few shortcuts in some of my favorite recipes, and that makes me happy!! One of them is for chicken cordon bleu...wow....tastes SO much like the original!!
Easy Chicken Cordon Bleuchicken breasts (about 1/2 of a chicken breast for each person)
dijon mustard
italian style bread crumbs
swiss cheese (or other favorite strong cheese)
ham
flour, seasoned with salt and pepper to taste
I tenderize the chicken by beating it with a meat tenderizer. You also can cut the chicken breasts in half to make them thinner. Next, dip the chicken in the seasoned flour, then the mustard, then the bread crumbs. Put cheese and ham on the inside and roll up. Secure with a toothpick. Bake at 350 degrees for 20-30 minutes (depending on the thickness of the chicken breasts). SOOO YUMMY!!!!! And super easy.
I have to admit that I have a weakness for homemade bread!! Although this recipe is no shortcut, it is definitely the best roll recipe I've ever had! (Okay, I may be a little biased since it's my mom's, but honestly, you can't get much better than this).
Mom's rolls:3/4 c. warm milk
1/4 c. warm water
1 tsp. sugar
1 pkg. yeast
1 egg
1/4 c. sugar
1 tsp. salt
1/3 c. shortening
3 c. flour
Mix milk, water, sugar and yeast together and let sit until yeast bubbles. Beat egg well then add 1/4 c. sugar. Add to yeast mixture. Add salt and shortening. Beat well. Mix in 3 c. flour gradually, adding more or less until dough is desired consistency (not too sticky, but not dry). Knead well and let rise until double. Roll out into desired shape and let rise to double again. Bake at 400 degrees for 10-15 min (until just starting to brown on top). Spread a bit of butter on top while hot for extra goodness. :)
